Power-Up Snack Balls

By Madeline and Anna Zakarian | Makes 18 snack balls

Ingredients

1 ¼ cups rolled oats

½ cup almond butter
1/3 cup honey
1 tablespoon chia seeds
1 tablespoon flax seeds
1 teaspoon vanilla extract ¼ teaspoon kosher salt

Helpful tools

Sheet pan

Instructions

  1. Combine all ingredients in a large bowl and use your hands to thoroughly mix together. Cover with plastic wrap and refrigerate for 30 minutes.
  2. Using a small cookie scoop or spoon, scoop 1-inch balls of the mixture onto a sheet pan. Roll each between your hands and place back on the pan. Store in the refrigerator in an airtight container for up to 2 weeks.

Variations

White chocolate cranberry balls: Add 1⁄4 cup dried cranberries and 1⁄4 cup white chocolate chips to the base recipe.

Double chocolate balls: Add 1⁄2 cup mini chocolate chips and 2 tablespoons cocoa powder to the base recipe.

Oatmeal raisin balls: Add 1⁄2 cup raisins and 1⁄4 teaspoon ground cinnamon to the base recipe.

Tip

Almond butters vary in consistency—some loose, others more firm—which can cause a variation when using this ingredient. If your snack ball mixture needs more almond butter to help ingredients stick together, gradually add in up to 1/4 cup more.
